Remove roast from protective packaging.
Preheat oven to 400°F (204°C).
Place roast into roasting pan and cook for 1 hour 25 minutes to 1 hour 35 minutes or until pop up thermometer pops and the internal temperature of 160°F (71°C) is reached.
Remove roast from pan and let rest for 10 minutes.
Carefully remove elastic strings and pop up thermometer from roast. Remove crackling and fat, set aside. Slice and serve.
FOR CONVECTION OVEN, cooking time is 1 hour 10 minutes to 1 hour 20 minutes.
