Remove roast from packaging and place roast back into foil pan. Let roast REST at room temperature for approximately 30 minutes. Preheat oven to 400°F (204°C). Medium Rare (145°F / 63°C): 50 – 60 minutes Pop Up Medium (160°F / 71°C): 60 – 70 minutes Well Done (170°F / 77°C): 70 – 80 minutes APPLIANCES VARY; THESE ARE GUIDELINES ONLY. ALWAYS use a thermometer to ensure desired doneness. The pop up orange thermometer will cook a perfect roast to medium doneness (160°F / 71°C). For medium rare or well doneness, use your own thermometer; insert thermometer so the end of the probe is in the centre of the roast. Always let the roast REST after removing from the oven for 5 – 15 minutes to maximize juiciness. Carefully remove pop up thermometer from roast, slice and serve.
