BBQ Pork Tenderloin with Potatoes and Asparagus on a White Plate


  • 1 Marcangelo BBQ Pork Tenderloin

  • 2 tbsp lemon juice

  • 1/4 cup vegetable oil

  • 1 tsp each, dried oregano, salt & pepper

  • 4-5 baking potatoes, peeled & cut into wedges

  • 1 large sweet potato, peeled & cut into wedges

Cooking Instructions

Preheat oven to 425°F [220°C]. Whisk together the oil, lemon juice and seasonings. Line a large baking sheet with parchment. Toss potato wedges in the oil mixture; place on baking sheet. Bake for 25 minutes. Place pork on baking sheet and bake as directed on package. Serve the pork tenderloin, sliced with the potatoes and a green salad or coleslaw.

Here’s an easy homemade version for coleslaw:

  • Finely shred 1/2 head of cabbage.

  • Stir in 1/4 cup (60 mL) mayonnaise.

  • Add a handful of finely chopped sweet onion, celery & grated carrot.

  • Chill until ready to serve.
