1 Marcangelo BBQ Pork Tenderloin
2 tbsp lemon juice
1/4 cup vegetable oil
1 tsp each, dried oregano, salt & pepper
4-5 baking potatoes, peeled & cut into wedges
1 large sweet potato, peeled & cut into wedges
Preheat oven to 425°F [220°C]. Whisk together the oil, lemon juice and seasonings. Line a large baking sheet with parchment. Toss potato wedges in the oil mixture; place on baking sheet. Bake for 25 minutes. Place pork on baking sheet and bake as directed on package. Serve the pork tenderloin, sliced with the potatoes and a green salad or coleslaw.
Here’s an easy homemade version for coleslaw:
Finely shred 1/2 head of cabbage.
Stir in 1/4 cup (60 mL) mayonnaise.
Add a handful of finely chopped sweet onion, celery & grated carrot.
Chill until ready to serve.
