Hearty Sausage and Vegetable Soup

Bowl of hearty sausage soup


  • 1 500g package Marcangelo Mild Italian Sausages

  • 1 large onion, chopped

  • 3 carrots, peeled & sliced

  • 2 celery stalks, sliced

  • 1 1/4 cups sliced mushrooms

  • 1 green pepper, chopped

  • 1 19oz/540mL can diced tomatoes, un-drained

  • 1 10oz/284mL can condensed tomato soup

  • 1 10oz/284mL can beef consommé

  • 2 cups water

  • 1/2 cup barley

  • 2 tbsp chopped fresh parsley

  • 2 tbsp chopped fresh basil

  • salt & pepper to taste

Cooking Instructions

  1. Remove casings from sausages.

  2. Sauté sausage and onion in large saucepan over medium-high heat, breaking up meat with back of a spoon, for about 5 minutes or until no longer pink.

  3. Add carrots, celery, mushrooms and peppers. Cook 10 minutes.

  4. Add remaining ingredients. Cover and simmer 45 to 50 minutes or until barley is tender.
