Ingredients
1 Tbsp. olive oil
2 cloves garlic, very thinly sliced
1 cup red onion, sliced into 1/8” wedges
2 cups mixed sweet pepper slices - red, orange and yellow
Salt and pepper
1 Tbsp. vegetable oil
1 pkg. Marcangelo Fajita Chicken Breast Strips
2 stalks green onions, thinly sliced
Cooking Instructions
Heat olive oil in a large non-stick skillet over medium-high. Add the garlic and sauté for 1 minute until just beginning to turn golden. Add the onion and the sweet pepper strips and sauté for 3 or 4 minutes until tender crisp. Remove from the heat and season lightly with salt and pepper to taste. Keep warm.
Prepare the Marcangelo Fajita Chicken Breast Strips according to package instructions. Heat vegetable oil in a large non-stick skillet over medium-high.Sauté the strips, turning occasionally, until nicely seared and cooked through, about 7 to 9 minutes.
If desired serve with warm flour tortillas or over rice or with beans and corn.
